Green Veggie Soup

Although uber healthy, this soup tastes extremely luxurious.
Serves: 2 Prep Time: 20 min

Ingredients:

2 Cups
Broth of choice
½ Cup
Baby marrow (chopped)
½ Cup
Green beans (chopped)
½ Cup
Broccoli (chopped)
½ Cup
Kale or spinach (chopped)
2 Tbsp
Coriander (chopped)
2 Tbsp
Parsley (chopped)
Salt & pepper to taste
½ Cup
Coconut milk

Method:

  1. Heat broth & add all vegetables to simmer for 10 – 15 minutes.
  2. Puree soup until smooth.
  3. Garnish with sprigs of fresh coriander when serving.
