Ginger Butternut Soup

This healthy aromatic soup can also be made with any pumpkin of choice or even with sweet potato.
Serves: 2 Prep Time: 20 min

Ingredients:

2 Cups
Broth of choice
1 Tbsp
Ginger (grated)
1½ Cups
Butternut (chopped)
1
Lemon grass stalk
1 Tbsp
Parsley (chopped)
1 Tsp
Coriander powder
1 Tsp
Cumin powder
1
Pinch cayenne pepper
½ Cup
Coconut milk
Salt & pepper to taste

Method:

  1. Add the broth & all other ingredients except coconut milk to a pot.
  2. Bring to simmer on low heat for 10 minutes.
  3. Add coconut milk & simmer for 3 – 5 minutes.
  4. Remove lemon grass & puree soup until smooth.
