Chicken Tagine

The healthy version of Moroccan cooking in a tagine.
Serves: 2 Prep Time: 10 min prep & 2 ½ hours cooking

Ingredients:

Pieces of chicken (e.g. thighs & legs)

Onion (diced)
3 Cups
Mixed veggies of choice
2 Tbsp
Coconut oil
2 Tsp
Italian herbs
½ Tsp
Cumin powder
1 Tsp
Turmeric
1 Tsp
Mace
1 Tsp
Honey
2 Tbsp
Lemon juice (fresh)
¼ Cup
Chicken stock
1
Clove garlic crushed
1
Sprig Fresh rosemary

Method:

  1. Lightly steam veggies & set aside.
  2. In tagine medium heat coconut oil & add onion & garlic (if used) to sauté for 2 min.
  3. Sprinkle salt over chicken & add to tagine to grill till light brown on both sides.
  4. Mix the herbs, spices, honey, lemon juice & chicken stock & add to chicken in tagine.
  5. Cook for 2 hours over low heat.
  6. Mix in steamed veggies, place rosemary sprig (if used) on top & cook for 30 minutes.
  7. Serve with fresh side salad.
